This summer, Aria reopens with a refreshed culinary perspective, guided by new talent in the kitchen and a renewed commitment to refined Mediterranean flavour. From coastal classics to creative interpretations, each dish reflects our evolving identity: soulful, and full of intention.

Behind the evolution are two passionate culinary enthusiasts whose stories span continents, cuisines, and cultures.
Rene Sánchez, a Le Cordon Bleu graduate, adds a layer of innovation and finesse. His journey through fine dining in Latin America, combined with his expertise in fermentation and Nikkei fusion, brings depth, precision, and energy to every plate.
Gorka Elizalde brings more than 18 years of experience in Spanish and Mediterranean kitchens across Europe, Central America, and Canada. Grounded in tradition but never bound by it, his cooking is defined by bold simplicity, respect for ingredients, and a deep connection to technique.
Together, they honour Aria’s foundation while infusing it with their personal vision, one where Mediterranean cuisine is not just remembered, but reimagined.

With so many new flavours to explore, here are a few we recommend trying first:
Honey Brie Flat Bread
Creamy Brie, roasted almonds, and sweet apricot meet a drizzle of honey and a burst of blueberry. Delicate, textural, and surprisingly balanced, this is a playful, perfect for sharing or savouring solo.
San Sebastián Red Snapper
Inspired by northern Spain’s seaside cuisine, this roasted queen red snapper is served with sofrito and panadera potatoes. It’s rustic comfort and refined flavour in perfect sync, ideal for those who want something light, fresh, and deeply satisfying.
Zarzuela
A soul-warming seafood stew with Mediterranean roots. This rich cacerola is brimming with local catch, served in a piperrada sauce with a citrus-squid ink cracker. It’s generous, layered, and a standout for seafood lovers.
Braised Beef Short Rib
Tender, slow-braised short rib finished in a Spanish bourbon sauce, served over truffle mashed potato with roasted vegetables. This is comfort food elevated, robust and aromatic.
