A Mediterranean Night to Remember 🍷

On March 19, we hosted a special Chef’s Tasting evening—an intimate dining experience where each course was designed to tell a story through flavour, balance, and detail.

Guests were welcomed with opening bites before moving into the first course: Tuna Crudo, featuring yellowfin tuna, jamón Ibérico dashi, kombu, and goat cheese—bright, refined, and layered with flavour.

The second course introduced Flounder, paired with vermouth foam, baby fennel, oyster-infused sauce, and tomato tartare—light, aromatic, and beautifully balanced.

One of the standout moments of the evening followed with Oxtail Ravioli, slow-cooked and rich, finished with parmesan foam, parmesan chips, and balsamic reduction—comfort elevated through technique and presentation.

For the main course, guests enjoyed Lamb, served with arugula cream, Albufera sauce, fingerling potato, and mushroom ragù—an elegant expression of Mediterranean cuisine.

To finish, the evening closed with Caribbean Vibes, a dessert of rum cake, coconut sorbet, passion fruit coulis, vanilla crumble, and coconut pastry cream, followed by petit fours for a final sweet touch.

Each course was paired with wines selected to complement and enhance the menu, creating a seamless wine pairing dinner from start to finish.

Led by Chef Felice Buonaiuto, the experience reflected the kind of thoughtful, refined dining moments we love to create—where every dish, every pairing, and every detail comes together around the table.
